Préparer, découper et désosser les viandes traditionnel dans le respect des règles de traçabilité. Réaliser la mise en valeur du rayon et le suivi de la fraîcheur des produits. Conseiller les clients sur les morceaux, les quantités et les modes de cuisson. Appliquer strictement les règles d'hygiène et la chaîne du froid.
