Chef Tournant (The Westin Dragonara Resort)

What are the key duties that the employee will carry out? Please list in order of importance.

• Ensures preparation and high quality of food in assigned section, in accordance with recipes and cooking standards.
• Maintains levels of productivity at assigned section through activities including, but not limited to assigning work to commis, ordering food products from store room and expediting meal periods.
• Maintains cleanliness of all areas behind the line, including but not limited to refrigerators, freezers, shelves, worktables and sinks.
• Prepares and maintains mise en place for shift and next day.
• Maintains open lines of communication with Restaurant Manager in order to maintain high quality levels of food items.
• Decreases risk of food spoilage through activities including, but not limited to proper rotation of food stock, proper storage of food before and after use.
• Returns all items to proper storage areas after use.
• Assists in preparation and completion of requisition forms.
• Interacts in courteous and professional manner with guests and hotel staff .
• Performs tedious detail work, including but not limited to, garnishes and presentation of dishes.
• Assists in the training of new staff.
