Sous Chef - Associate Canteen - Bangkok Marriott Hotel The Surawongse

The Associate Canteen Chef plays an important role in providing nutritious, high-quality meals and a positive dining experience for hotel associates. This position is responsible for preparing, cooking, presenting, and replenishing daily meals in accordance with approved menus, recipes, food-safety requirements, and established quality standards. Duties may include preparing ingredients, operating kitchen equipment, monitoring food temperatures, maintaining appropriate portion control, accommodating dietary requirements, and ensuring sufficient food availability throughout each meal period.

Maintain cleanliness, sanitation, and organization of all food-preparation areas, equipment, storage spaces, and serving stations. Properly receive, label, store, and rotate food products according to food-safety procedures principle. Minimize food waste and promptly communicate any shortages, equipment issues, maintenance needs, or food-quality concerns to the supervisor. Work closely with the Culinary, Stewarding, Purchasing, and Human Resources teams to support the smooth daily operation of the associate canteen.

Follow all company, food-safety, hygiene, safety, and security policies and procedures. Report accidents, injuries, and unsafe working conditions to the manager and complete all required training and certifications. Ensure uniform and personal appearance are clean, professional, and compliant with grooming standards. Maintain the confidentiality of proprietary information and protect company assets.

Communicate with others using clear and professional language. Develop and maintain positive working relationships with colleagues, support the team in achieving common goals, and treat all associates with courtesy and respect. Ensure adherence to food-quality, presentation, cleanliness, and service standards.

Stand or walk for extended periods and perform physical activities including reaching, bending, twisting, pulling, pushing, and stooping. Move, lift, carry, push, pull, and place objects. Perform other reasonable job duties as requested by supervisors.
