About The Role
JOB SUMMARY
The Beverage Manager is responsible for leading and overseeing the daily beverage operations of the property, including Bars, Lounges, Restaurants, In-Room Dining, and other beverage service areas. This role ensures exceptional guest experiences through the delivery of high-quality beverage programs, adherence to brand standards, effective cost controls, inventory management, and team development.
The Beverage Manager plays a critical role in maximizing beverage revenue and profitability while maintaining compliance with liquor laws, food safety standards, and company policies. The position works closely with Food & Beverage leadership and operational teams to drive guest satisfaction, operational excellence, and employee engagement.
KEY RESPONSIBILITIES
I. Beverage Operations & Operational Excellence
- Lead and oversee the daily beverage operations across Bars, Lounges, Restaurants, and In-Room Dining outlets.
Ensure compliance with all Food & Beverage policies, standards, and operating procedures.
- Implement and maintain beverage service standards in accordance with Marriott brand requirements.
- Monitor beverage quality, presentation, consistency, and service delivery across all outlets.
- Support the development and implementation of beverage menus, promotions, and outlet initiatives.
- Ensure operational readiness and smooth service execution during all operating periods.
- Assist outlet teams during peak business periods to ensure exceptional guest service.
- Participate in pre-event and post-event meetings to understand guest and group beverage requirements.
- Maintain food handling, sanitation, hygiene, and safety standards throughout beverage operations.
II. Beverage Revenue Growth & Business Performance
- Support the development and execution of beverage strategies that maximize revenue and guest spend.
- Assist in creating innovative beverage programs, promotions, seasonal offerings, and special events.
- Analyze beverage sales performance and identify opportunities to increase profitability.
- Monitor beverage sales mix and recommend actions to enhance revenue generation.
- Partner with Food & Beverage leadership to implement initiatives that strengthen outlet performance.
- Promote beverage offerings and experiences that support brand positioning and guest satisfaction.
- Assist with menu planning and beverage program enhancements based on market trends and guest preferences.
III. Financial Management & Inventory Control
- Manage beverage inventories according to business levels, budgets, and operational requirements.
- Monitor beverage costs and implement controls to achieve financial targets.
- Maintain effective beverage control systems including perpetual inventory, bar pars, issue and return processes, and period-end inventories.
- Ensure strict adherence to liquor control policies, portion controls, and stock management procedures.
- Monitor beverage cost percentages, inventory variances, and revenue performance.
- Review financial reports, payroll reports, and operating statements as required.
- Support departmental budgeting and forecasting processes.
- Participate in managing controllable expenses and identifying cost-saving opportunities.
- Ensure all inventory records and beverage-related documentation are maintained accurately.
IV. Guest Experience & Service Excellence
- Deliver exceptional guest service across all beverage outlets and service areas.
- Interact with guests regularly to obtain feedback on beverage quality and service standards.
- Respond promptly and effectively to guest concerns, complaints, and special requests.
- Promote a guest-focused culture that continuously seeks service improvement opportunities.
- Empower team members to anticipate guest needs and exceed expectations.
- Review guest satisfaction feedback, comment cards, and service metrics to identify improvement areas.
- Implement service recovery measures to enhance guest satisfaction and loyalty.
- Ensure beverage experiences contribute positively to overall guest satisfaction scores.
V. Leadership & Team Development
- Lead, coach, and mentor beverage associates to achieve operational and service excellence.
- Train employees on beverage standards, liquor control procedures, service expectations, and compliance requirements.
- Communicate operational priorities and critical event information to the beverage team.
- Ensure employees understand performance expectations and operational standards.
- Foster teamwork, accountability, and a culture of continuous improvement.
- Conduct regular briefings, coaching sessions, and operational meetings.
- Identify training needs and implement development plans to support business objectives.
- Support employee engagement and recognition initiatives within the department.
VI. Human Resources & Talent Management
- Support recruitment, onboarding, and training activities for beverage team members.
- Ensure staffing levels align with operational needs and guest service expectations.
- Participate in departmental orientation programs for new associates.
- Assist with performance management and employee development initiatives.
- Support corrective action processes in accordance with company policies and procedures.
- Promote a positive, professional, and inclusive work environment.
- Encourage ongoing learning and development opportunities for team members.
- Ensure fair and consistent application of policies and standards.
VII. Communication & Cross-Functional Collaboration
- Build strong working relationships with Food & Beverage, Culinary, Sales, Events, Human Resources, Finance, and Operations teams.
- Collaborate with outlet managers and supervisors to ensure seamless service delivery.
- Communicate beverage promotions, operational updates, and business priorities effectively.
- Support cross-functional initiatives designed to improve guest experiences and operational performance.
- Coordinate with Culinary teams on menu pairings, promotions, and special events.
- Ensure effective communication before, during, and after group events and functions.
VIII. Compliance, Safety & Risk Management
- Ensure compliance with all liquor licensing regulations and responsible alcohol service requirements.
- Maintain compliance with Marriott policies, brand standards, and operational procedures.
- Monitor adherence to beverage control policies, inventory procedures, and cash handling practices.
- Ensure all associates follow food safety, sanitation, hygiene, and workplace safety standards.
- Conduct regular inspections and audits of beverage operations and storage areas.
- Identify operational risks and implement corrective actions where required.
- Support internal audits, brand audits, and compliance reviews.
- Promote a culture of safety, accountability, and operational excellence throughout beverage operations.

QUALIFICATION AND EXPERIENCE
- Degree or Diploma in Hospitality Management, Hotel Management, Food Service Management, Business Administration, or a related discipline with a minimum of 4 years of experience in Beverage Operations, Food & Beverage, Hospitality, or a related field.
- Proven experience managing beverage operations in hotels, resorts, restaurants, bars, or hospitality environments.
- Strong understanding of beverage service operations, liquor control procedures, inventory management, and cost controls
- Knowledge of beverage sales analysis, forecasting, budgeting, and financial performance management.
- Strong understanding of liquor licensing regulations, responsible service practices, and food safety standards.
- Demonstrated ability to lead, train, and develop high-performing teams.
- Excellent guest service, communication, and interpersonal skills.
- Strong analytical, organizational, and problem-solving abilities.
- Experience using POS systems, inventory management tools, and Microsoft Office applications.
- Ability to work flexible schedules, including evenings, weekends, public holidays, and peak business periods.
