With 241 guest rooms, multiple food and beverage outlets, and extensive meeting and event spaces, our Culinary Team works across a varied and fast paced hotel operation.

What is the job?

We are looking for an experienced full-time Chef de Partie to bring skill, consistency and confident section leadership to our Culinary Team. This is a great opportunity to contribute to a premium hotel.

Your day to day

Culinary Operations & Service – Lead an assigned kitchen section, organise mise en place, and prepare and present high-quality dishes across all dining outlets. Coordinate with the pass and F&B team to deliver consistent and timely service.

Team Leadership & Development – Allocate section tasks, supervise and coach junior colleagues, and maintain high standards of preparation, presentation and service throughout each shift.

Operational Excellence & Compliance – Support stock control, portion management, waste reduction, menu development and food costing while maintaining HACCP, allergen, hygiene and workplace safety standards.

What we need from you

  • Minimum six years’ experience in professional kitchens, including at least three years as a Chef de Partie.
  • Experience leading a section and supervising junior colleagues in a busy hotel or high-quality restaurant kitchen.
  • Strong culinary, organisational and food presentation skills.
  • A working knowledge of HACCP, allergen management and workplace safety requirements.
  • Degree or vocational certificate in Culinary Arts or a related field.
  • A positive, collaborative approach aligned with IHG brand standards, service culture, and values.
  • Flexibility to work a rotating roster, including mornings, evenings, weekends, public holidays and peak business periods. In particular Sundays and Mondays for dinner service weekly.
  • Based in Hobart or willing to relocate.
  • Applicants must already hold valid Australian working rights. Please note that employer-sponsored visa arrangements are not available for this position.
