The Aussie Hotel in Shepparton is searching for an experienced and passionate Head Chef to take ownership of our newly renovated kitchen and lead a strong, established team. About the Role

As Head Chef, you'll be responsible for leading all kitchen operations, driving food quality, managing costs and developing a positive team culture. You'll work closely with venue leadership to deliver a consistent and profitable food offering while maintaining high operational standards.

Key Responsibilities

  • Lead, train, mentor and develop the kitchen team
  • Manage rostering, labour costs and kitchen performance
  • Maintain exceptional food quality, presentation and consistency
  • Create seasonal specials and contribute to menu development
  • Oversee stock control, ordering and supplier relationships
  • Ensure food safety, compliance and cleanliness standards are maintained
  • Manage food costs, recipe costing and kitchen profitability
  • Lead from the front during service and support the team in all areas of operation

About You

We're looking for a genuine leader who is passionate about hospitality and building high-performing teams.

You'll Bring

  • Minimum 6 years' experience in professional kitchens
  • Ideally 3+ years' experience as a Head Chef in a pub, hotel or high-volume venue
  • Strong Sous Chefs ready to step into their first Head Chef role are encouraged to apply
  • Proven experience managing food and labour costs
  • Excellent leadership, communication and organisational skills
  • Strong knowledge of modern pub and bistro dining
  • A hands-on approach and willingness to lead by example
  • A valid driver's licence
  • A team-first attitude and commitment to creating a positive kitchen culture
